FINNISH COFFEE BREAD 
2 c. scalded milk
1 stick butter
1/4 stick butter
2 tbsp. dried yeast
1/2 c. warm water
4 eggs, well beaten
1 c. sugar
1 tsp. salt
1 tsp. cardamom
4-6 c. flour

In mixing bowl pour scalded milk over the butter and butter. Cool to lukewarm. Add sugar, salt and cardamom. Stir in well beaten eggs. Add yeast which has been dissolved in 1/2 cup warm water. Add flour (4-5 cups); beat until smooth. Let stand 10 minutes covered with towel.

Add more flour if needed. Dough should be softer than bread dough - not too sticky to handle. Let rise until double (about 1 hour). Place in loaf pans or bread in cookie sheets. Let rise again. Bake at 350 degrees for 35 minutes or until crust is brown or topping sounds hollow. Can glaze with mixture of powdered sugar and milk.
