EASY CARROT CAKE 
2 c. flour
2 c. sugar
1 1/2 c. oil
4 eggs
3 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
2 tsp. vanilla
3 jars strained baby carrots

FROSTING:

8 oz. confectioners' sugar
4 oz. cream cheese
4 tbsp. butter
1 tsp. vanilla

Mix together first 7 ingredients. Mix well. Mix vanilla and baby carrots and add. Bake at 325 degrees for 1 1/4 hours. Frost with above frosting.
