COTTAGE CHEESE PANCAKES 
2 eggs
1 (12 oz.) cottage cheese
2 tbsp. butter, melted
1/4 c. flour
1 tsp. sugar (opt.)
Dash of salt

Beat eggs until very light. Add cottage cheese, butter, flour, sugar and salt; beat only until well-blended. Cook on preheated, greased griddle. (Silver dollar size suggested.) Serve with syrup, jelly, jam, frozen strawberries or peaches. Serves 4. If creamed cottage cheese is used, omit salt and butter.
