COTTAGE CHEESE PANCAKES 
3 eggs, separated
1 c. cottage cheese (dry is better)
3 tbsp. flour
1/2 tsp. flavoring (Coconut is good)

Beat whites until stiff; set aside. Using blender, beat yolks and cottage cheese until smooth; add flavoring and flour. Blend until smooth. Fold into beaten whites. Bake on a hot griddle like pancakes. Serve with butter and syrup.

Serves two persons.
