SWEET POTATO CROQUETTES 
6 c. boiled mashed sweet potatoes
3 c. chopped pecans
6 tbsp. butter
12 tsp. cream
6 eggs, well beaten

Mix pecans and potatoes together while still hot. Beat in butter, cream and eggs. Season to taste.

When cold form croquettes and cook. Croquettes might well be firm enough to shape and fry as is. If not, roll in egg mixture and finely ground pecans (or some other sort of crumb mixture) then lightly fry in butter until slightly browned.
