SWEET POTATO CROQUETTES 
5 med. size sweet potatoes
2 tbsp. sugar
2 tbsp. butter
1 tsp. lemon juice
6 marshmallows
2 slightly beaten egg whites
2 c. crushed corn flakes

Cook potatoes in jacket; peel and mash. Season with sugar, butter and lemon juice. Make croquettes by shaping potatoes around marshmallows. Chill 1 hour. Dip into egg whites, roll in corn flakes and fry in deep oil until golden brown.
