POTATO SALMON CROQUETTES | |
1 1/2 lbs. cooked all-purpose potatoes, peeled and finely diced 1 (7 1/2 oz.) can salmon, drained, skinned 1/3 c. finely chopped green peppers 2 tbsp. minced onions 1 egg white lightly beaten Freshly ground black pepper to taste 1. Combine all ingredients and shape into 12 patties. 2. Put a small amount of polyunsaturated vegetable oil into a non-stick an and fry until browned on all sides. Makes 6 servings. |
