POTATO CROQUETTES 
2 c. leftover mashed potatoes
2 eggs
1/2 c. flour
1/8 tsp. nutmeg
1 egg, beaten
1/2 c. bread crumbs
4 tbsp. butter or enough fat for frying

Combine the first four ingredients. Roll mixture into long rope. Cut into three inch limbs. Dip into the eggs, then the bread crumbs. Fry in the butter or deep fry in the fat until golden brown.
