SWEET POTATO SOUFFLE 
2 c. mashed sweet potatoes
1/2 c. sugar
1/2 stick butter
2 eggs
1 tsp. vanilla
1/2 c. milk

TOPPING:

1 stick butter
1/4 c. flour
1/2 c. sugar
1 egg
1 sm. can crushed pineapple

Mix sugar and flour and add to butter. Add egg and pineapple. Pour over sweet potatoes. Bake at 350 degrees for 30 minutes.
