RAISIN RICE PUDDING 
1 pkg. low-cal vanilla pudding mix
2 c. skim milk
1 c. cooked rice
1/2 c. golden raisins
1 tsp. nutmeg

In deep 2 quart casserole combine all except nutmeg. Microwave on High 7-9 minutes, stirring 2 times, or until boils. Remove and pour into 4 serving dishes, sprinkle with nutmeg and cool. Equals: 1 Bread, 1/2 Fruit, 1 Milk (212 cal.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
