BLACK BEAN SOUP 
1 (16 oz.) pkg. black beans
1 tbsp. canola oil
1 lg. onion, diced
1 lg. green pepper, diced
1 lg. clove garlic, minced
1 (15 oz.) can tomato sauce
1/2 tsp. pepper
8 c. water

Rinse beans and pick over. In large saucepan, heat beans and 8 cups water to boiling. Boil 3 minutes. Remove pot from stove, let stand for 1 hour.

In large skillet, in hot oil, cook onion, green pepper and garlic until tender. Stir onion mixture into undrained beans. Add tomato sauce and black pepper. Heat to boiling. Reduce heat and let mixture simmer for 2 hours or until beans are tender.
