PICKLE PEACHES 
1 gallon firm cling peaches
6 to 8 c. sugar
1 piece ginger root (if preferred)
2 sticks cinnamon
1 tbsp. whole allspice
1 tsp. whole cloves
2 c. water
3 c. vinegar

Add sugar, water, vinegar. Tie spices in a little bag and boil for 3 minutes. Add peaches to boiling solution. Simmer until tender, about 10 minutes. Pack into jars, and add pickling syrup. Fill jars to 1/2 inch of top. Seal while hot.
