FOUNDATION SYRUP FOR PEACH OR
PEAR PICKLES
 
1/2 lb. sugar
1 pt. vinegar
1/2 oz. mixed pickling spices
1 stick cinnamon

Break up cinnamon sticks, then place with spices in cheesecloth, tie to make bag.

In large pot boil vinegar, sugar and spice bag for 12 minutes. Drop in peeled fruit and cook until tender. Cook only enough fruit for one jar at the time. Pack in hot sterilized jars and seal. (6 pints vinegar and 7 cups sugar and 1 box mixed spices will do about 8 pints.)
