QUICK FRIED BEEF AND BROCCOLI | |
1/2 lb. beef tenderloin or flank steak 1 lb. broccoli 1/2 tbsp. soy sauce 1 tsp. sugar 1/2 tsp. baking soda 2 tsp. cornstarch 1 tbsp. cold water 1 tbsp. oil Slice the beef across the grain into thin slices. In bowl place soy sauce, sugar, baking soda, cornstarch and water, mix well then add 1 tablespoons oil add meat, let marinate for at least 1/2 hour. Cut broccoli into small pieces, removing stems. Drop into boiling water for 30 seconds, remove and plunge into cold water. Drain. Heat oil in frying pan to 300 degrees, stir fry beef until done, remove and set aside. Drain oil from pan. Heat 3 tablespoons oil. Add the broccoli, stir fry about 10 seconds, add beef and stir quickly until mixed. Remove and serve. |
