ESCALLOPED PEAS 
1 can lg. peas
1/4 lb. Velveeta cheese
Small jar pimentos
1 onion
Cracker crumbs

WHITE SAUCE:

3 tbsp. butter
3 tbsp. flour
1 c. milk
Dash of salt & pepper

Melt butter in pan. Add peas, cheese, pimento, onion and sauce. Cook on top of stove until cheese is melted, about 5 minutes. Grease bottom of dish. Sprinkle cracker crumbs in bottom. Pour in dish. Cover the top with cracker crumbs. Cook about 20 minutes at 450 degrees until brown.
