CREAMY POTATO DISH 
8 med. potatoes, boiled in skin (a little under cooked)
1/4 c. butter
1 can cream of chicken soup
1 (16 oz.) sour cream
1/3 c. chopped onion
1 1/2 c. shredded Cheddar cheese
Crushed corn flakes
A Few tbsp. melted butter

Cool, peel and grate potatoes, put in 9 x 13 inch dish. In saucepan, heat butter and soup together. Blend in onion, sour cream and cheese.

Add to potatoes; mix in well. Top with the few tablespoons melted butter, then sprinkle crushed cornflakes all over top until covered. It's best to crush your own cereal, rather than buy the crumbs in can. Bake at 350 degrees for 45 minutes, covered. Serves 10-12.
