MEXICAN CORN CASSEROLE 
40 oz. frozen corn, whole kernel
8 oz. cream cheese
1 can water chestnuts, sliced
4 oz. can mild chili peppers, chopped
4 oz. (or to taste) jalapeno peppers, sliced
1 jar pimentos, chopped

Cook corn in covered dish with very little water for 15 minutes (high) in microwave. Add salt to taste. Add all other ingredients and mix well. Return to microwave, covered, for 10 to 15 minutes (high). May be cooked in oven for 30 minutes at 350 degrees and may use canned whole kernel corn, drained.

Since microwave ovens vary in power, you may need to adjust your cooking time.
