TUNA PATTIES 
3 tbsp. flour
3 tbsp. melted butter
1/4 tsp. paprika
Dash pepper, onion powder and celery salt
3/4 c. milk
1 can (6 1/8 oz.) tuna
2 1/2 c. soft bread crumbs
1 egg
Crushed crackers (mixture of Ritz and saltines is best)

Melt butter, add flour and seasonings. Stir in milk. Stir constantly and cook until thickened. Cool slightly.

Combine tuna with the bread crumbs. Mix in cooled flour and milk mixture. Form into patties. Dip in mixture of 1 egg plus 1 tablespoon water. Dip into crushed crackers. Place in baking pan and drizzle with 3 tablespoons of melted butter. Bake at 350 degrees 25 minutes. Serve with your favorite tartar or dill sauce. Yield: 6 patties.

DILL SAUCE:

1/2 c. mayonnaise
1/2 - 1 tsp. dill weed
Dash of garlic powder
1 tsp. lemon juice

Mix all together and serve with tuna patties.
