CORN BREAD SALAD 
2 (6 oz.) pkg. corn bread mix
8 slices bacon, cooked and crumbled
1 onion, chopped
1 green pepper, chopped
2 tomatoes, chopped
1 c. mayonnaise

Prepare corn bread as directed on package. Cool and crumble. Add bacon and vegetables. Stir in mayonnaise. Chill until ready to serve. Yield 10 servings.

NOTE: Gets better each day, so make ahead of time to serve.
