CHOCOLATE CHIP APPLE CAKE 
3 c. diced apples
2 lg. eggs
1 c. sugar
3/4 c. vegetable oil
1/2 c. chocolate bits
2 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
2 tsp. vanilla

Peel and core the apples and chop small. With spoon, beat the eggs. Add sugar, oil, and chocolate bits; mix well. Stir flour with cinnamon, baking soda, and salt to mixture. Add to batter all at once and mix. Stir in vanilla with apple pieces. Pour into a greased 10 inch tube pan. Bake 1 hour in 325 degree oven or until cake is done. May use 13 x 9 inch pan. Needs no frosting, stays moist for days.
