CRANBERRY RELISH 
1 c. water
1 (16 oz.) pkg. cranberries
3/4 c. sugar
1 c. orange juice
1 c. raisins
1 c. chopped walnuts
1 c. chopped celery
1 apple, med. sized, chopped
1 tbsp. orange peel
1 tsp. ginger

Over medium heat, bring the cranberries, sugar and water to a boil, stirring frequently. Reduce heat to low and simmer for 15 minutes. Remove from heat and combine with remaining ingredients. Cover and refrigerate. Make this one week before you want to use it so that the spices will be well absorbed.
