CRANBERRY - DATE CAKE | |
2 1/4 c. flour 1 c. sugar 1 tsp. baking soda 1/4 tsp. salt 1 1/2 c. fresh cranberries, coarsely chopped 1 c. pitted dates, snipped 1 c. walnuts, chopped 2 eggs, beaten 1 c. buttermilk 3/4 c. vegetable oil GLAZE: 1/2 c. orange juice 3/4 c. sugar Sift together 1 cup sugar, soda and salt. Add cranberries, dates and nuts. Combine eggs, buttermilk and oil. Add to flour mixture and mix well. Pour batter into greased and floured 8 inch fluted tube pan. Bake 55 minutes in 350 degree oven. Cool in pan for 10 minutes. Remove from pan onto wire rack. Glaze: Combine orange juice and sugar in small pan and cook stirring until sugar dissolves. While still a bit warm, spoon on glaze. |
