PUMPKIN CAKE ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. nuts

Combine and mix ingredients (except nuts) in the order listed. Pour into greased and floured pan (10 x 15 inches). Sprinkle with nuts and bake at 375 degrees for 15 minutes. Sprinkle towel with powdered sugar, roll cake in towel, and let cool.

FILLING:

1 c. confectioners sugar
6 oz. pkg. cream cheese
4 tbsp. butter
1/2 tsp. vanilla

Combine ingredients and spread over unrolled cake. Roll cake with filling and refrigerate.
