JANE'S SALMON PATTIES 
This is my Aunt Jane's recipe.

1 (15 oz.) can salmon, clean and reserve juice
1/3 cup finely chopped onion
1 egg, beaten
1/3 cup Italian bread crumbs
2 tbsp. self-rising flour
1/4 cup grated Parmesan cheese

Drain salmon juice into bowl, add flour and mix. Clean salmon and add to mix with any additional juices then incorporate the remaining ingredients. Shape into patties and fry or bake.

Note: If baking, dredge in additional plain bread crumbs for a crunchy crust.
