ALBAMA BISCUITS 
3 c. flour
2 tbsp. sugar
2 tsp. baking powder
1 tsp. salt
4 tbsp. shortening
1 c. warm milk
1 pkg. dry yeast or 1 cake compressed yeast
1/3 c. warm water

Sift dry ingredients together. Dissolve yeast in warm water. (Water should feel comfortably warm, but not hot when dropped on inside of your wrist). Melt shortening and add to warm milk. Add milk mixture to dissolved yeast. Stir to blend. Stir into flour with a fork as you would baking powder biscuits. Turn out on floured bread board. Fold lightly into shape to roll. (Do not knead just pat). Roll out soft dough about 1/2 each thick, cut with biscuit cutter not over 2/3 each in diameter. Place one on top of another in each way. Let rise to slightly over double. Bake 450 degrees for 15-20 minutes. Yields 10 to 12 buns.
