ZUCCHINI CASSEROLE 
Instant rice or 1/2 c. cooked reg. rice
1/4 inch sliced zucchini
Sliced onion
1/4 inch sliced tomato
Bacon strips
Shredded Cheddar cheese

Use any size pan. Layer in order. Salt and pepper and garlic powder after zucchini layer. Finish layers. Bake at 350 degrees for 1 hour.
