COLORADO CHEESECAKE 
1 (12 oz.) box vanilla wafers, crushed
6 tbsp. butter, melted

FILLING:

40 oz. cream cheese, softened
1 3/4 c. sugar
3 tbsp. flour
1/4 tsp. salt
6 lg. eggs
3/4 c. heavy cream
1 tsp. pure vanilla extract
1 tsp. freshly grated lemon peel

CRUST: Mix together wafer crumbs and butter and press onto bottom and sides of 10" spring form pan. Chill while preparing filling.

Beat cream cheese, add sugar, flour, salt, lemon peel and vanilla. Beat well. Add eggs, one at a time, beating well after each. Blend in cream. Pour into crust. Bake at 500 degrees for 10 minutes. Continue baking at 225 degrees for additional 70 to 80 minutes. Cool at room temperature. Refrigerate 8 hours or overnight. Can be served with fresh fruit sauce: peach, strawberry, raspberry.
