BROCCOLI SOUFFLE 
1 bunch pre-cooked broccoli
1 c. thick white sauce
2/3 c. mayonnaise
1 tbsp. chopped green onion
3 eggs, beaten
Salt and pepper to taste
1 c. grated Cheddar cheese

WHITE SAUCE:

3 tbsp. melted butter
3 tbsp. flour
1 c. milk

Combine all ingredients and put into buttered casserole. Top with cheese. Bake at 325 for 25-30 minutes.
