QUILTERS POTATO SALAD 
2 eggs, beaten
1/3 c. vinegar
1/3 c. sugar
1 tsp. mustard
1 tsp. salt
1/4 tsp. pepper
1/2 c. mayonnaise
1 tsp. chives
1/2 tsp. celery seed

For dressing, combine first 6 ingredients in small saucepan and cook over low heat until thick, stirring constantly. Cool. Blend into mayonnaise until smooth. Add chopped chives and celery seed.

SALAD:

2 1/2 lbs. potatoes
1 c. celery, chopped
1 c. onion, chopped
Salt and pepper to taste
Paprika

To prepare salad, cook unpeeled potatoes in salt water to cover for 30-40 minutes. Drain and set in cold water to cool. Refrigerate. Peel and cut. Add celery, onion, and salad dressing, salt and pepper. Blend thoroughly. Sprinkle with paprika if desired.
