FRENCH'S FISH | |
1 lb. fish of your choice 1 1/2 packets of Townhouse crackers, rolled into fine crumbs 1 1/2 sticks of butter 1/2 c. lemon juice 1/2 c. white wine 3 tomatoes 1 onion, sm. 5 tbsp. Parmesan cheese Butter an oblong baking dish and place slices of tomatoes on bottom, covered by fish. Saute chopped onion in 2 tablespoons of butter. Melt one stick of butter and then add lemon juice and white wine to the melted butter and onions. Put cracker crumbs over fish. Pour the butter mixture over fish. Sprinkle with Parmesan cheese and dot with remaining butter. Bake at 400 degrees for 25 minutes. |
