ZUCCHINI RELISH 
10 c. zucchini
4 c. onions
3 lg. peppers (2 green and 1 red)
2 1/2 c. white vinegar
1 tsp. dry mustard
1/2 tsp. black pepper
1 tsp. turmeric
1 tsp. mustard seed
6 c. sugar

Remove ends from zucchini; do not peel. Seeds may be removed but not necessary. Ground chop or grate. Keep peppers separate. Place zucchini and onions in bowl. Add 4 teaspoons salt. Mix and let stand overnight.

Next day, pour cold water over the salted ingredients and let drain. Add vinegar, dry mustard, pepper, turmeric, seed, sugar. Add ground zucchini, onions, and peppers to liquid. Place in pot and boil for 5 minutes. Stir gently and place in jars and seal.
