EGGPLANT CASSEROLE 
1 med. eggplant
4 to 5 med. potatoes
1 lb. ground beef
1/4 c. chopped onion
1/2 c. shredded cheddar cheese
Salt & pepper to taste

Serves 4 to 5. Peel, quarter and boil potatoes. When done, mash potatoes (add butter and milk if desired), and then put in a casserole dish.

Brown ground beef, add onions, cook until tender. Add salt and pepper to taste. Put on top of potatoes in dish. Chop and boil eggplant until tender. Put on top of potatoes and beef in dish. Top with shredded cheese and bake at 350 degrees until cheese melts. Serve with French bread on the side.
