SQUASH CASSEROLE 
1 1/2 lbs. fresh or frozen yellow squash
1 sm. can pimento, chopped
2 sm. onions, chopped fine and sauteed
1 c. sour cream
1 can cream of chicken soup
4 sm. carrots, grated
1 sm. pkg. Pepperidge Farm herb stuffing mix

Cook squash, mash, drain and season. Add remaining ingredients, holding back half of stuffing mix. Mix well. Line shallow (1 1/2 quart) baking dish with 3/4 of remaining stuffing mix and 1 stick melted butter. Add squash mixture. Sprinkle stuffing mix on top. Bake at 350 degrees for 30 minutes. Can make ahead and refrigerate or freeze.
