CHEESY COUNTRY SCRAMBLE 
1/4 c. chopped green pepper
2 tbsp. minced onion
2 tbsp. reduced calorie butter
4 eggs, beaten
1/4 c. skim milk
1/2 c. diced, cooked ham
1/2 c. shredded process cheese spread
1 med. ripe tomato, coarsely chopped

Place green pepper, onion and butter in a 1 1/2 quart microwavable bowl. Microwave at high power 1 minute.

Stir eggs, milk and ham together; add to vegetables. Cover and microwave at high power 3 to 4 minutes or until eggs are just set, stirring 1 or 2 times during cooking.

Add cheese and tomatoes. Cover and microwave 1 minute. Let stand 2 minutes or until eggs set or cheese melted. 180 calories: 13.3 gm protein, 11.7 gm fat, 19.5 gm carbohydrate. 2-4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
