COUNTRY STYLE SCRAMBLED EGGS 
1 lg. onion, finely chopped
1 lg. green pepper, finely chopped
1 med. potato, peeled & grated
2 tbsp. melted butter
6 to 8 eggs
1 tsp. salt
1/2 tsp. basil leaves
1/4 tsp. pepper
15 slices bacon, ham or sausage (cooked & crumbled)

Saute vegetables in butter 15 to 20 minutes or until tender but not brown. Beat eggs slightly, add seasoning, and beat until frothy. Stir eggs into vegetable mixture. Cook over low heat until eggs are set but still moist. Stir in choice of meat.
