EGG SAUSAGE CASSEROLE 
1 1/2 lbs. sausage, browned, scrambled, and drained
8 slices bread, cubed
2 1/2 c. milk
4 eggs
2 can Ortega chilies, diced
1 can mushroom soup
1 tsp. salt
3/4 tsp. dry mustard
3/4 lb. Velveeta cheese
Grated Cheddar cheese
Fresh mushrooms (if desired)

Grease a 9 x 13 inch pan. Layer bread and sausage, chilies, and mushrooms if used alternately. Mix eggs, milk, soup, and spices; pour over layers. Melt cheese (Velveeta) and pour on top. Sprinkle with the Cheddar cheese. Soak overnight in the refrigerator. Bake 1 hour at 350 degrees. Serves 6-10 people.
