CHEESE TOASTED TORTILLAS | |
6 (8 or 9 inch) flour tortillas 2 tbsp. olive oil Dash of salt 1 tbsp. Italian Herb mixture 3-4 tbsp. finely grated hard jack or other grating cheese (Parmesan, Romano, Swiss) Preheat oven to 400 degrees. Cut tortillas into halves or quarters, arrange in one layer on baking sheets. Bake 7-9 minutes in upper third and middle levels of preheated oven, switching baking sheets just until tortillas are beginning to crisp. Remove and turn them oven. Paint light with olive oil and sprinkle with herbs and salt. Spread a teaspoon of cheese over each. Return to oven 3-4 minutes, until cheese melts and begins to brown. These tortillas can be made a few days in advance and stored airtight, re-crisping in oven if necessary. |
