REUBEN CASSEROLE 
1 lg. jar sauerkraut
1 c. sour cream
1/2 c. chopped onion
2 cans corned beef, crumbled
1 c. Swiss cheese, grated
1 c. Monterey Jack cheese, grated
8 slices rye or pumpernickel bread
1/2 c. butter, melted

Mix sauerkraut, sour cream and onion. (Place in baking pan the corned beef.) Put sour cream mixture on top of meat. Cut bread into cubes and place on top. Drizzle butter over bread. Bake at 350 degrees for 35-45 minutes. Do not cover. May be frozen before or after.
