GRANDMA SEEM'S LEMON SPONGE PIE 
1 c. sugar
Dash salt
3 eggs
1 lemon rind, grated
Pie shell, unbaked
4 tsp. flour
2 tbsp. butter, melted
5 tbsp. lemon juice
1 1/2 c. scalded milk

Combine sugar, flour, salt and melted butter. Separate 3 eggs. Beat egg whites until stiff. Beat egg yolks and add 5 tablespoons lemon juice and grated rind of 1 lemon. Stir into sugar mixture. Add milk and mix well. Fold in beaten egg whites. Pour into unbaked pie shell. Bake at 325 degrees for 45 minutes.
