QUESADILLAS 
Corn tortillas
Monterey Jack cheese, sliced and cut into sm. pieces
Corn oil
Tongs
Frying pan
Spatula

On medium heat, heat oil. Place 1 corn tortilla in frying pan until partially cooked - place 2 or 3 pieces of cheese on half of tortilla. With tongs fold the other half of tortilla over the cheese, press down with spatula - flip tortilla over and fry on other side - after lightly browned remove from oil and place on paper towels to absorb oil. Quesadilla will look like a flat taco -cut into 3 parts. Serve with Pace picante sauce or your favorite dip.
