CUSTOM QUESADILLAS 
2 tbsp. oil
10 corn tortillas
Cheddar cheese, grated
Jack cheese, grated
Salsa

In a small frying pan, heat oil until hot. With a pair of tongs, grasp edge of tortilla and dip in hot oil for a few seconds to soften. (Hint: Do not dip tongs or edge of tortilla tongs are grasping into oil and the tortilla will not tear.) Set tortillas on paper towels to soak excess oil.

In center of each tortilla, add a little of each cheese and a touch of salsa. Fold tortilla in half and press to keep it together. Heat in oven at 350 degrees until cheese melts. Do not overcook or tortilla will harden.
