BLACK BEAN SOUP/CHEESE
QUESADILLAS
 
2 (16 oz.) cans black beans
1 c. tomato salsa
4 (10-inch) flour tortillas
1 1/4 c. Muenster cheese
1 c. water

Soup: Put beans, salsa and water in blender. Start blender on low and increase speed to mix well (approximately 1 minute). Pour in bowls and heat in microwave.

Top With Your Choices:

crumbled bacon
quartered cherry tomatoes
minced red onion
minced fresh cilantro
sour cream
minced red and/or yellow bell peppers

Quesadillas: Heat tortilla in skillet; cover with cheese. When cheese melts, top with 2nd tortilla; flip and heat through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
