BLUE CHEESE BEAN SALAD 
Serves 6.

1 to 2 lb. fresh or frozen green beans
6 slices bacon, diced
1/2 med. onion, sliced into rings
1/2 c. salad oil
1/4 c. vinegar, cider or wine
1 tsp. salt
1/2 tsp. sugar
1 1/4 tsp. black pepper
1 c. crumbled Blue cheese

Cook beans until tender crisp and drain. Fry bacon crisp. Combine green beans, bacon and remaining ingredients except blue cheese. Toss lightly until mixed. Stir 1/2 cup of the Blue cheese into salad and sprinkle the rest on top. Chill before serving.
