FRESH APPLE CAKE 
Cake:

3 c. flour
1 tsp. salt
1 tsp. baking soda
1 1/2 c. pecans, chopped
1 c. Wesson oil
2 c. sugar
3 eggs
2 tsp. vanilla
3 c. raw apples, chopped

Icing:

2 c. sugar
1/2 c. sugar
1 tbsp. flour
1 stick butter
1 small can evaporated milk

For cake: Mix oil, sugar, eggs and vanilla. Sift together flour, salt and soda and add to first mixture. Fold in pecans and apples.

Bake in tube pan at 350°F for 1 hour.

For icing: Brown 1/2 cup sugar in iron skillet. While this is browning, add all other icing ingredients in a thick cooker and bring to a boil. Mix browned sugar and let it all cook together 2 minutes. Remove from heat and beat until ready to put on cake.
