FRESH APPLE CAKE 
1 1/2 c. cooking oil
2 c. sugar
3 eggs
3 c. self-rising flour
1 tsp. vanilla flavor
3 c. chopped apples
1 c. chopped pecans
1 c. brown sugar
1/2 c. butter
1/4 c. milk
1 tsp. vanilla flavor

Mix oil and sugar. Beat in eggs. Add flour. Mix well. Add vanilla, apples and pecans.

Bake in 2 (9-inch) pans or 13 x 9 pan in preheated 350°F oven for approximately 40 minutes.

Filling: Cook brown sugar, butter, milk and vanilla for approximately 2 minutes at a rolling boil. Spoon between layers and on top of cake.
