HEALTHY POTATO BOATS 
2 lg. Idaho potatoes
1 lb. yellow squash
1/4 c. butter, melted
1 tsp. salt
2 tsp. butter, melted

Bake potatoes in the oven 60 minutes at 425 degrees. While waiting cook peeled and cubed squash in vegetable steamer for 15 minutes until soft. When potatoes have cooled slightly, cut in half and scrape pulp from potato. Blend potato, squash, salt and butter until creamy and yellow. Heap filling into potatoes. Brush with 2 teaspoons butter and broil 10 minutes or until lightly browned.
