TEA SCONES | |
2 c. flour (unsifted) 1 tsp. cream of tartar 1 tsp. baking soda 1/2 tsp. salt 2 tsp. sugar 1/2 c. butter or shortening 3/4 c. light cream or milk Combine dry ingredients and mix well. Cut in butter with pastry blender or 2 knives, scissors fashion. When the mixture looks like coarse meal, gently stir in the cream to make a soft dough. Divide into 2 portions. Roll or pat out on floured surface to 1/3 inch thick. Cut to 3 inch squares and then cut each square into 2 triangles. Place on greased baking sheet. For a rich color, lightly brush tops with beaten eggs. Bake at 425 degrees for 12-15 minutes. Sprinkle with powdered sugar. |
