SHRIMP FRIED RICE 
2 lbs. shrimp, uncooked
3 c. rice, cooked
1 c. scallions, chopped
1 c. onions, chopped
1/2 c. green peppers, chopped
1/2 c. celery, chopped
1 c. bean sprouts
1 c. mushrooms
1 tsp. salt & pepper
1 tsp. garlic powder
Soy sauce

Stir fry separately - onions, scallions, green peppers, celery and mushrooms. Saute shrimp in butter. Scramble eggs. Combine each with rice and add salt, pepper, garlic powder and soy sauce (as desired). Add bean sprouts and cook for 10 to 15 minutes. Serves 6 to 8.
