PEANUT BUTTER COOKIES 
1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 cup peanut butter
2 cups all purpose flour
1/2 teaspoon salt
2 teaspoons baking soda
1 cup oats

Preheat oven to 350°F (175°C).

Cream together shortening and sugars (butter may be used as the shortening but cookies will spread more and brown more quickly).

Add eggs and beat well. Mix in peanut butter. Mix together flour, salt, baking soda and add to the creamed sugar mixture. Mix well.

Stir in oats. Form dough into 1 inch balls and place on cookie sheets. Flatten with a glass or the tines of a fork.

Bake for 12 minutes at 350°F (slightly underbaked is better than overbaked - so watch carefully or cookies will be dry).

This is a good recipe, and remember to watch the cookies carefully. I put them on an air bake sheet and took them out at about 9-10 min and let them cool for 2 min. They are so soft and yummy. If you want a little more done 10-12 as recipe says.

Just made these cookies and they are delicious. I used shortening. I didn't roll them into balls, just dropped them by teaspoon and then flattened them with a fork. Liked the oatmeal in them. I cooked them for 10 minutes.

I put a bite size Dove chocolate or Caramel candy on top after baking (instead of Hershey's kisses). People rave. Or sometimes white chocolate bits in the mix. Softer cookies are always better liked by most. Real butter too. Oatmeal is a good addition too.

Love these cookies, not a big oatmeal fan so I used chocolate chips, baked for 10 mins and let cool. Best tasting cookies ever, soft and moist without being over cooked or under cooked. "A" for whomever came up with this.

These cookies are wonderful but if you are short on time it's so much easier to just mix together a cup of peanut butter (smooth or crunchy) a cup of sugar (brown, white or splenda) and an egg together. Mix it well, make balls place a couple of inches apart on ungreased baking sheet press with fork to flatten slightly and bake for 5-7 minutes at 350°F. Longer for crisper cookies. Cool on wire racks store in air tight container depending on ball size makes about 2 dozen cookies.

just made this recipe, very easy and easy to follow. used butter instead of shortening so I put the cookies in cupcake pans to keep them from spreading out too far, Delicious.
