FRUIT RIPPLE COOKIE CAKE | |
2 c. all-purpose flour 1 1/2 c. sugar 1/2 tsp. salt 4 eggs 1/2 c. (1 stick) butter, softened 1/4 c. cooking oil 1 1/2 tsp. vanilla 1 lg. can (at least 20-21 oz.) fruit pie filling (any flavor) Preheat oven to 350 degrees. In large bowl, mix all ingredients except the pie filling. Spread half of the batter into a 9x13x2 inch cake pan which has been greased on the bottom. Top with pie filling. Dollop remaining batter over the fruit, covering as much of the filling as possible. Swirls in the batter and uncovered fruit peeking through are to be expected. Bake at 350 degrees for 35-40 minutes or until the top is golden brown. |
